Skillet Cooking With a World of Options

It's late in the day and once again you're facing the dinner dilemma. No need to call for pizza or order Chinese food! The solution to serving a world of flavors at the dinner table may be as close as your freezer . . . and your skillet.

You've likely seen one-step skillet meals in your local grocery store. These all-in-one dinners offer complete meals including beef, chicken or turkey, coupled with rice, pasta

or potatoes and vegetables. One of the hottest trends in the kitchen today, these sizzling dishes couple convenience and variety with home-cooked flavor.

Part of the skillet appeal is in allowing you to make dishes that would be difficult or time-consuming to prepare from scratch. You could, for example, have Teriyaki Chicken, Beef Stroganoff or Chicken Alfredo on the table in 15 minutes.

The skillet meals can also serve as a stepping stone to preparing more elaborate dishes in minutes. Easily adaptable, they satisfy the need for convenience, while lending themselves to a variety of sophisticated flavors.

Craving Spanish food? Try the Savory Chicken Paella with shrimp, rice and saffron. The use of skillet meals makes this traditionally challenging dish a snap to prepare. If you're looking for something a little lighter, prepare the Hot Oriental Chicken Salad. With ginger and garlic flavoring, this dish is accented with water chestnuts, green onion and fresh napa cabbage for a delicate flavor.

Tips for Skillet Cooking

For best results, try the following tips when preparing skillet meals:

  • Use a deep skillet, approximately 12 inches across.
  • If your skillet is non-coated, add one tablespoon of vegetable oil to coat bottom of skillet or use nonstick spray before preparation.
  • Be careful of escaping steam when removing the cover from your skillet.

    Garlic Chicken Burritos

    Makes 4 servings

    1 package (24 ounces) frozen Stouffer's Lean Cuisine Skillet Sensations Garlic Chicken
    ½ cup (4 ounces) diced green chiles
    1 tablespoon lime juice
    8 flour tortillas
    2 cups (8 ounces) shredded low-fat Monterey Jack or Cheddar cheese
    1 jar (16 ounces) Ortega Salsa Prima
    1 lime, cut into 4 wedges

    PREHEAT oven to broil.

    PREPARE Garlic Chicken according to package instructions, adding chiles and lime juice. Wrap tortillas in damp towel; microwave on high 40 to 50 seconds or until warm.

    FOR EACH BURRITO spoon one-eighth chicken mixture across center of tortilla. Top filling with 1/4 cup cheese and 2 tablespoons salsa. Fold in both sides. Place burrito folded

    side down on broiler-safe pan or platter. Repeat.

    BROIL 1 minute or until browned. Serve with remaining salsa and lime wedges.

     

    Hot Oriental Chicken Salad

    Makes 2 servings

    1 package (24 ounces) frozen Stouffer's Lean
    Cuisine Skillet Sensations Chicken Oriental
    1 cup (about 3 ounces) sliced mushrooms
    2 cups finely shredded napa cabbage
    1 tablespoon white or rice vinegar
    1 tablespoon reduced sodium soy sauce
    2 tablespoons sliced green onion

    PREPARE Chicken Oriental, adding sliced mushrooms, according to package instructions. Keep hot.

    TOSS cabbage with vinegar and soy sauce in medium bowl; spread on serving platter. Spoon Chicken Oriental mixture on cabbage; sprinkle with green onion.

     

    Savory Chicken Paella

    Makes 4 servings

    1 teaspoon olive oil
    1 clove garlic, finely chopped
    1 package (40 ounces) frozen Stouffer's Skillet Sensations Savory Chicken & Rice Family Meal
    ½ teaspoon saffron threads (optional)
    1/8 teaspoon ground red pepper
    ½ pound fully cooked, cleaned medium-sized shrimp
    1 can (14.5 ounces) diced tomatoes, drained

    HEAT olive oil in deep 12-inch skillet over medium heat. Add garlic; cook until aromatic. Add Savory Chicken & Rice, saffron and red pepper; prepare according to package instructions. Add shrimp and tomatoes; cover and cook over low heat for 5 minutes or until hot.

     

    Sensational Beef Pie

    Makes 4 servings

    1 package (25 ounces) frozen Stouffer's Skillet Sensations Homestyle Beef*
    ½ cup water
    Ground black pepper
    1 unbaked 9-inch pie shell

    PREHEAT oven to 425ºF.

    PLACE Homestyle Beef and water in 9-inch microwave-safe pie plate. Cover and microwave on high for 3 minutes; stir, cover and continue cooking on high for 3 minutes. Sprinkle with pepper to taste.

    TOP with pie crust; fold edges under and crimp. Cut four slits towards center of crust.

    BAKE for 18 to 20 minutes or until crust is golden brown.

    * Frozen Stouffer's Skillet Sensations Homestyle Chicken or Stouffer's Skillet Sensations Lean Cuisine Roasted Turkey may be substituted.
